Aduki beans (aka adzuki beans) are small red beans that are most typically used in Japanese cooking. They are often featured in sweet recipes such as red bean paste. Aduki beans look like small kidneys, and are used to strengthen weak kidneys.
Fagioli Aduki (noti anche come fagioli adzuki) sono piccoli fagioli rossi che vengono tipicamente utilizzati nella cucina giapponese. Sono spesso presenti in ricette dolci come la pasta di fagioli rossi. I fagioli Aduki sembrano piccoli reni e sono usati per rinforzare i reni deboli.
Ingredienti
- 1 Cup beans, washed and soaked overnight
- 1 Medium onion, diced
- 3″ Piece kombu sea vegetable
- 1 Carrot, cut into medium size chunks
- 1 Cup calabata squash, diced (you may substitute with another orange winter squash)
- ½ Cup parsnip chunks
- 3 Tbsps soy sauce
- 1 tazza di fagioli, lavati e ammollati durante la notte
- 1 cipolla media, a dadini
- 3 "pezzo di verdura di mare kombu
- 1 carota, tagliata a pezzi di dimensioni medie
- 1 tazza di zucca calabata, tagliata a dadini (è possibile sostituirla con un'altra zucca invernale arancione)
- ½ Coppa di pezzetti di pastinaca
- 3 cucchiai di salsa di soia

Immergere i legumi durante la notte
Put kombu in bottom of clay cooking pot and add onion layer. Next, add a layer of carrots, then parsnips and squash on top. Then add drained beans and enough water to cover the them, bring to a boil,lower heat to simmer. I prefers to use the “shock method” for cooking these beans. I add ¼ cup or more of water at a time as the level of the water goes below the beans. This has the effect of stopping the boiling and when boiling resumes, (still using low heat) and water is lost, add cold water again to shock the beans. Cook this way for about 1 hour, then add soy sauce and stir the top ⅓ of the beans, without disturbing the vegetables. Cook another 15 minutes, or until the beans are soft. Mix well and serve.
Metti il kombu sul fondo della pentola di terracotta e aggiungi lo strato di cipolla. Quindi, aggiungere uno strato di carote, quindi pastinache e schiacciare sopra. Quindi aggiungere i fagioli sgocciolati e acqua a sufficienza per coprirli, portare a ebollizione, a fuoco basso per cuocere a fuoco lento. Cuocere altri 15 minuti, o fino a quando i fagioli sono morbidi. Mescolare bene e servire.
