Ingredienti
- 1 leek, chopped (only the white part)
- 8 cups spring water
- 2 dried shiitake mushrooms, soaked for ½ hour and cut into small pieces
- 3” piece of kombu seaweed, soaked 10 minutes and cut into small sticks
- 1 cup hato mugi (also known as pearl barley or job’s tears) grain
- 1 small carrot, cut julienne style
- 1 cup mung bean sprouts
- Soy sauce for taste
- Hato 1 porro, tritato (solo la parte bianca)
- 8 tazze di acqua di sorgente
- 2 funghi shiitake secchi, ammollati per ½ ora e tagliati a pezzetti
- 3 "pezzo di alga kombu, imbevuto di 10 minuti e tagliato a bastoncini
- 1 tazza di hato mugi (noto anche come orzo perlato o lacrime del lavoro) grano
- 1 carota piccola, tagliata a julienne
- 1 tazza di germogli di fagioli mung
- Salsa di soia per il gusto
Preparazione
Clean and wash the hato mugi well, being careful because this grain often has stones and dirt in it). Put it in a soup pot with the water, kombu, shiitake mushrooms and bring to a boil. Cook with medium-high flame for 20 minutes (note this grain will not get soft on a low temperature). Add carrots, sprouts and return to a boil. Continue to cook until the grain is soft. Add soy sauce to taste and serve.
Pulisci e lava bene l'hato mugi, facendo attenzione perché questo grano ha spesso pietre e sporcizia). Mettilo in una pentola con l'acqua, i funghi kombu, shiitake e porta ad ebollizione. Cuocere a fuoco medio-alto per 20 minuti (nota che questo grano non si ammorbidisce a bassa temperatura). Aggiungere le carote, i germogli e tornare a ebollizione. Continua a cuocere fino a quando il grano non è morbido. Aggiungere la salsa di soia per assaggiare e servire.
