Ingredienti
- 1 cup of hato mugi also called pearled barley or Job’s tears
- 4 ½ of spring water or more as needed
- 1 small onion, diced small
- 1 carrot, diced
- 1 stalk of celery, diced
- 2 shiitake mushrooms, soaked in water and cut small
- 1 cup, cubed tofu
- 1 small head of broccoli cut
- 1 cup of fresh corn
- 2″ piece of kombu sea vegetable
- 2 Tbsps of white miso
- 1 tazza di hato mugi chiamato anche orzo perlato o lacrime di Giobbe
- 4 ½ di acqua di sorgente o più se necessario
- 1 cipolla piccola a dadini piccoli
- 1 carota, a dadini
- 1 gambo di sedano, a dadini
- 2 funghi shiitake, imbevuti di acqua e tagliati piccoli
- 1 tazza, tofu a cubetti
- 1 piccola testa di broccoli tagliati
- 1 tazza di mais fresco
- 2 "pezzo di verdura di mare kombu
- 2 cucchiai di miso bianco
Preparazione
Place the onions on the bottom of a heavy pot add enough water to cover and bring to a boil for 5 minutes. Add a piece of kombu and add the hato mugi to the water and bring to a boil with a high flame, continue to boil for 15 minutes, then add the carrot, the celery, the mushroom and the fresh corn. Add water if needed. Bring back to a boil and then lower slightly the flame. Cook for 10 minutes. Remove the kombu, slice it thin, put back into the pot and add the cubed tofu and cook 5 minutes, add the broccoli flowers and simmer for few more minutes. When the grain is tender, dilute the miso in a small cup with some hot water and pour into the stew. Stir with a wooden spoon, cook another minute and remove from heat.
Mettere le cipolle sul fondo di una pentola pesante aggiungere acqua a sufficienza da coprire e portare ad ebollizione per 5 minuti. Aggiungere un pezzo di kombu e aggiungere l'hato mugi all'acqua e portare ad ebollizione con una fiamma alta, continuare a bollire per 15 minuti, quindi aggiungere la carota, il sedano, il fungo e il mais fresco. Aggiungere acqua se necessario. Tornare a ebollizione e abbassare leggermente la fiamma. Cuocere per 10 minuti. Rimuovere il kombu, affettarlo sottilmente, rimetterlo nella pentola e aggiungere il tofu a cubetti e cuocere 5 minuti, aggiungere i fiori di broccoli e cuocere a fuoco lento per qualche minuto in più. Quando il grano è tenero, diluisci il miso in una piccola tazza con dell'acqua calda e versalo nello stufato. Mescolare con un cucchiaio di legno, cuocere un altro minuto e togliere dal fuoco.
Servire.
