Ingredients

  • 1 medium size lotus root cut in half long-ways, then sliced into thin rounds

  • 1 medium size onion, thinly sliced

  • 1 Tbsp sesame oil

  • Tamari soy sauce for taste

  • Water

Preparation

Heat the oil in a pan and sauté the onions. Layer the sliced lotus root on top of the onion. Pour enough water to barely cover the roots. Bring to a boil, cover and simmer on low heat for ¾ hour. Take the lid off and let the liquid evaporate. Add Tamari soy sauce and cook another minute.

Mix well and serve.
